This week’s meal prep includes two easy salad recipes. The first one is my mom’s recipe, a family favorite; and the second is from blogger I <3 Umami.
- Persian Cucumbers (thinly sliced)
- Red Onion (thinly sliced)
- Rice Vinegar
- Black pepper to taste
Toss all of these ingredients in a bowl in proportions that fit your craving. Tastes better over night, the onions really soak in that vinegar flavor.
This salad makes a great side to anything super hearty, my favorite — Red Lentil Dahl. When the onions start to turn bright pink, I like to put these on top of tacos. This week I served it up with salmon.
Paleo Triple Green Kale Salad by I <3 Umami

I was missing some of the ingredients so my cut down version looked like this:
- Tuscan Kale
- Ginger chopped
- Garlic chopped
- Green onions
- Snow peas
- Balsamic Vinegar
- Sesame Oil
- Soy Sauce
- Sesame seeds
- Lemon Juice (I’m obsessed with the soy sauce & lemon juice combo)
Chopped everything that needed to be chopped, tossed it all together and let it sit for a while to break down the kale.
Most of these ingredients can be found at Trader Joes.
I served this up with the cucumber salad and salmon. This salad gets better with age, which makes it perfect for meal prepping.
A few notes on meal prepping:
Problem: Like many of you, I find my recipes on Pinterest; but since I’m saving so many recipes throughout the week, I have trouble finding them when it comes time to actually making it. Does that happen to you?
Solution: I’ve decided to tweet my meal prep recipes when I plan them on Sundays so I can refer to a refined list when I’m ready. In that way, you can check them out too 🙂
Problem: I find recipe blogs overloaded with ads!
Solution: By clicking PRINT THIS RECIPE I can save it as a PDF on my desktop and follow the recipe ad free.
I’ve also thought about getting a printer so that I can print out the recipes. I started writing them out, but got a bit lazy. I prefer to read a hard copy so I can avoid a messy laptop.
